Veggie Citrus Wraps with Asian Peanut Sauce

Our veggie citrus wraps a quick, easy, and delicious meal that can be whipped up for a healthy lunch at home, or a simple week night dinner. The wraps are tossed with a with sweet asian peanut sauce with a little extra for dipping. The wraps can be easily customized by adding or taking out any of the ingredients listed. Add in shredded chicken or swap out fresh cilantro for another of your favorite fresh herbs.

Yields4 Servings

Wraps
 4 cups slaw (cabbage or broccoli)
 1 avocado, sliced
 1 bell pepper, thinly sliced
 2 organic navel oranges, peeled and segmented
 ¼ purple onion, thinly sliced
 ¼ cup slivered almonds
 chopped fresh cilantro
 4 large flour tortillas
Orange Peanut Sauce
 ¼ cup organic navel orange juice
 ¼ cup honey
 ¼ cup creamy peanut butter
 ¼ cup oil (olive or avocado)
 2 tbsp soy sauce (or tamari)
 1 tbsp rice wine vinegar
 1 tsp garlic powder
 1 tsp ginger powder
 1 tsp sesame seeds
 salt to taste

Mix all the sauce ingredients together in a medium sized bowl. Place the slaw in a large bowl and toss with ¼ cup of the sauce.

Place your tortilla out on a flat surface and fill with the slaw, avocado, bell pepper, orange segments, onion, and sprinkle with almonds and cilantro. Roll up the wraps and cut in half. Serve with a small bowl of extra sauce for dipping. This recipe makes 4 veggie wraps.
