Santa Maria Tri-Tip Tacos

With the weather starting to warm up, and summer just around the corner, we cannot wait to fire up the grill and entertain outdoors! Perfect for entertaining or feeding the whole family on taco Tuesdays, these Santa Maria style tri-tip tacos will impress them all. Swap out, take out, or add to the topping options to create your favorite flavor combinations!

For the Tri-Tip Rub
 3 lbs Tri-Tip Steak
 1 tbsp fresh ground pepper
 1 tsp crushed red pepper
 1 tbsp Herbs de Provence
 1 tbsp garlic powder
 2 tbsp kosher salt
 zest of 3 organic lemons
For Serving
 46 organic lemon slices
 heated corn tortillas
 shredded cabbage
 fresh chopped cilantro
 your favorite chunky red salsa
 chopped red onion

Combine rub ingredients and apply to Tri-Tip steak making sure to coat completely with a generous layer of the herbs. Allow the steak to sit covered for at least an hour, preferably overnight.

After the rub has had time rest on the steak, heat grill and grill steak until medium-rare (slightly pink the center). Remove from grill and slice steak into thin strips and set aside.

To assemble the tacos, layer two corn tortillas per taco. Fill with shredded cabbage, cilantro, onions, and top with slices of steak. Finish with a dollop of salsa and a liberal drizzle of fresh lemon for true Santa Maria style. The 3lb steak serves about 4-6 people.
