Are you ready for spring break with the kids at home?! Make these grapefruit jelly snacks with the kids for a fun activity in the kitchen! Rich in antioxidants and packed with vitamin C grapefruit jellies are a healthier snack for the kids to enjoy.

In a heat safe glass bowl combine the gelatin and ½ cup of juice, stir and allow to sit and thicken.
Bring the remaining 1 ½ cup of juice to a boil on the stovetop. Once the juice has reached boiling, remove from heat and allow to cool slightly.
Add hot juice to gelatin mixture in bowl and stir till everything is dissolved. Add vanilla and sugar and stir again until the sugar is dissolved. (May add additional sugar and vanilla if you would like to reduce the sourness of the grapefruit further). Pour mixture into jelly molds and place in the refrigerator overnight. This recipes makes about 32 1”x1” shapes.
