Curry Chicken Salad Sandwich

Ingredients
 2 cups rotisserie chicken, shredded
 1 cup organic red grapes, finely chopped
 2 sticks celery, finely chopped
 ¼ cup cashews, finely chopped
 1 cup dairy-free mayonnaise
 2 tbsp curry powder
 3 tbsp tamarind chutney
 8 mini croissants

1) In a blender combine: Dairy-free mayonnaise, curry powder and tamarind chutney. Blend well, set aside.

In large bowl combine: Rotisserie chicken, organic grapes, celery and cashews.

Pour dressing over chicken mixture and stir well until fully coated.

Slice mini croissants and spoon about 2-3 tablespoons of chicken salad onto each sandwich.

Ready to serve!
