Give your salad an antioxidant boost with our creamy blueberry vinaigrette. This dressings features simple ingredients and can easily be worked into your meal prep day to have a delicious homemade dressing on hand for the week!

On stovetop in saucepan, combine: blueberries, granulated sugar, brown sugar and juice from ½ of lemon. Cook on low heat until blueberries break down and mixture begins to thicken. This will take 10-15 minutes of regular stirring. Remove from heat and strain mixture into separate bowl, put aside strained blueberry preserve to cool.
When blueberry preserve has cooled, place the following ingredients in the blender: blueberry preserves, balsamic vinegar, olive oil, avocado, juice from the second half of lemon, black pepper. Blend mixture until smooth. Refrigerate until cold and serve. Will keep refrigerated 1 – 2 weeks. Recipe makes about 12oz of vinaigrette.
