Almond Waffles with Fresh Blueberry Syrup

Blueberry Almond Waffles

Yields5 Servings

Waffles
 3 cups all-purpose flour
 3 eggs, separated
 1 pkg of yeast + ¾ cup of warm water for dissolving
 ¾ water for batter
 1 ½ cups cup of milk
 ¼ cup vegetable oil
 ½ cup granulated sugar
 ½ cup fresh blueberries
 1 tsp almond extract
Blueberry Syrup
 1 cup fresh blueberries
 1 tbsp fresh lemon juice
 1 tbsp cornstarch
 ½ tsp cinnamon
  cup sugar
 ½ cup water
 ½ cup maple syrup

To make the syrup. In a pan heat sugar, cornstarch and cinnamon on low-medium heat. Slowly add water and stirring continuously until mixture starts to thicken. Add blueberries and lemon juice. Simmer stirring regularly until blueberries cook down, about 10 minutes. Remove from heat and add in maple syrup. Puree mixture in blender if desired for consistency. Pour into serving container. This recipe makes about 1 1/2 cups of Fresh Blueberry Syrup.

Dissolve yeast in warm water and wait 10 minutes. If desired beat separated egg whites into soft peaks. (A chilled glass or metal bowl and chilled beaters is best for this). In separate large bowl mix milk, sugar, oil, flour, and egg yolks. Fold egg whites into batter mixture with spatula. When ready, add in yeast and mix. Add in almond flavoring and blueberries. Fold until lumps disappear. Heat waffle iron and add batter and sprinkle in fresh blueberries. Cook according to your waffle iron’s directions. Top waffles with blueberry syrup! This recipe will make about 4-6 waffles.
