Sweet Peach Iced Tea
- 5-6 black tea bags
- 6 cups water (for tea brewing)
- 4 cups peach puree
- 3 cup sugar
- 3 cup water (for simple syrup)
- 1 -2 fresh peaches sliced (for serving)
Steep black tea bags in 6 cups of water for 3-5 minutes. Remove tea bags and allow tea to cool. When cool, place tea in serving pitcher. In deep pan on stovetop combine sugar, 3 cups water, and peach puree. Cook on med-high heat until sugar is dissolved and mixture begins to thicken slightly. Remove from heat and strain out puree pulp from syrup and allow syrup to cool. Once tea and peach syrup are cool, you can either combine the tea and syrup, or chill separately. To combine, pour syrup into tea and stir well, adding fresh peach slices to pitcher and place pitcher in refrigerator till chilled. To use syrup separately, chill tea with peach slices and peach syrup in separate serving containers, and when ready add desired amount of syrup to individual tea glasses. Be sure to serve tea over ice and garnish with mint.
