Roasted Golden Beet and Mandarin Salad

Sweet mandarins, perfectly-roasted golden beets, and our favorite peppers create a salad that’s unlike anything you’ve experienced. These bright and colorful ingredients will uplift even the darkest of winter days!


  • 4 Golden beets, peeled and sliced thin
  • 4 Homegrown Organic Farms mandarins, peeled and separated
  • 2 Red jalapenos (or Fresno peppers), deseeded and sliced
  • 1/2 Cucumber, sliced
  • 2 Tbsp rice vinegar
  • 2 Tbsp sweet rice cooking seasoning
  • 1 Tbsp raw honey
  • 3 Tbsp soy sauce
  • 1 tsp fresh ginger
  • Sesame seeds to taste


Preheat oven to 400F. Place beets and peppers on a parchment lined cookie sheet. Bake for 10 – 15 minutes until lightly browned. Allow to cool (if desired – they can also be served warm). While beets and peppers are cooking, in a separate bowl whisk together rice vinegar, rice cooking seasoning, raw honey, soy sauce, fresh ginger, and sesame seeds. When cooled place beets, mandarins, peppers, and cucumber into a large salad bowl. Pour dressing over the mixture and toss. Serve.
