- 4 Golden beets, peeled and sliced thin
- 4 Homegrown Organic Farms mandarins, peeled and separated
- 2 Red jalapenos (or Fresno peppers), deseeded and sliced
- 1/2 Cucumber, sliced
- 2 Tbsp rice vinegar
- 2 Tbsp sweet rice cooking seasoning
- 1 Tbsp raw honey
- 3 Tbsp soy sauce
- 1 tsp fresh ginger
- Sesame seeds to taste
Preheat oven to 400F. Place beets and peppers on a parchment lined cookie sheet. Bake for 10 – 15 minutes until lightly browned. Allow to cool (if desired – they can also be served warm). While beets and peppers are cooking, in a separate bowl whisk together rice vinegar, rice cooking seasoning, raw honey, soy sauce, fresh ginger, and sesame seeds. When cooled place beets, mandarins, peppers, and cucumber into a large salad bowl. Pour dressing over the mixture and toss. Serve.
