persimmon spiced coffee cake

We took a spin off the classic coffee cake and gave it fall feel and flavor. Homegrown Organic Farms features two persimmon varaites each fall the hachiya and fuyu. Hachiya persimmons are known as the astringent variety and are typically not great to eat fresh unless they are properly ripened. We recommend using this variety to bake and cook with as the high heats encourage the sweeter flavors to arise. Their sister variety the fuyu persimmons are not astringent and can be eaten fresh when firm or softened slightly as they will maintain a sweeter taste.

For Spice Mix
 2 tsp cinnamon
 1 tsp nutmeg
 ½ tsp cardamom
 ¼ tsp ground ginger
 23 grinds of fresh black pepper
Cake Mix
 1 cup organic HGO farms hachiya persimmon pulp (3-4 persimmons)
 1 ½ cups all-purpose flour
 Spice mixture (see above)
 ½ cup brown sugar
 ¼ cup granulated sugar
 1 tsp baking powder
 1 tsp baking soda
 ¼ cup butter, softened
 3 whole eggs
 1 tsp vanilla extract
 1 tsp lemon juice
 ½ tsp salt
Streusel Topping
 1 cup all-purpose flour
 ½ cup butter, melted
 ½ cup brown sugar
 1 tsp spice mix (see above)
Royal Icing
 1 cup powdered sugar
 3 tbsp apple cider / juice
 ¼ tsp lemon juice
 pinch of cinnamon

Preheat oven to 350F. Mix together all spice ingredients. Set aside 1 tsp of the mixture to add to
the streusel topping and set aside the remaining spice mix to add to the cake itself.

Cake

In a mixing bowl combine: brown sugar, granulated sugar, eggs, butter and mix on low
with a paddle mixer until butter is softened and sugar and butter have creamed. Add in
persimmon pulp, vanilla extract, lemon juice, spice mixture, salt and blend again. Add in baking
powder, baking soda, and 1 cup of flour, blend. Add in final ½ cup of flour making sure that the
mixture is combined well and the batter is smooth. Pour batter into an 8x8 greased baking dish
and tap to even the batter in the dish.

Streusel Topping

In medium sized bowl, combined all streusel ingredients and stir by hand
until mixture is crumbly. Sprinkle at least 1inch layer of streusel over cake batter so it is
completely covered. Bake for 45-55 minutes or until toothpick comes out clean and streusel
topping is nicely browned.

Icing

While the cake is baking, combine all icing ingredients in a small
bowl. Allow cake to cool and drizzle icing over top of cake with spoon. Serve with coffee or tea!
