Even though we’re currently sitting pretty and enjoying all of the glorious things spring has to offer, we know that summer is right around the corner and summer includes what we like to call “beach days” which are the uncomfortably hot summer days that rise over 100 degrees.

In other words: we wish we could spend more time at the beach than we actually do, but that won’t stop us from pretending our snacks haven’t instantly transported us there. Not to mention, kids will go crazy for them while parents find comfort in knowing exactly what ingredients they contain.

Get started now with this simple ingredient list, most of which you will probably have readily stocked at home. We can go ahead and call this a win-win-win

Makes: 6 servings.

Ingredients:
2 cups of Peaches (or Nectarines), peeled and chopped
2 Tbsp butter
¼ cup of Brown Sugar
½ tsp Vanilla
1 cup Vanilla Greek Yogurt
Pinch of Cinnamon
Popsicle molds and sticks

Instructions:
Separate out ½ cup of uncooked peaches to put into the molds. In a large skillet, heat butter on the stovetop until melted. Pour in 1 ½ cups of chopped peaches into the skillet. Add brown sugar and vanilla. Cook on medium heat until stonefruit is slightly browned and the sugar begins to thicken and caramelize. Remove from heat and place caramelized fruit in the blender and blend until smooth. In a large bowl, pour blended stonefruit mixture. Add the cup of Greek yogurt and stir. Add a pinch of cinnamon and stir. Blend well. Place one layer of peach uncooked chunks into popsicle molds. Add a layer of the yogurt mixture. Add more peach chunks and another layer of yogurt mixture. Repeat until the molds are full. Place in freezer overnight and then enjoy!
