Spring is here and ice cream is calling our name!
Have you ever made your own ice cream? You can! Let us walk you through the process, enjoy!
- 2 cups heavy whipping cream
- 1 14 oz can of sweetened condensed milk
- 1 Tbs vanilla
- Juice of one mandarin (approx. ¼ cup, we used gold nugget mandarins)
- 1 Tbs orange zest
- 12 shortbread or almond cookies
- 1/2 cup Nutella (hazelnut spread) melted
- 3 Tbs butter melted
- 3 hefty pinches of sea salt
To make Nutella Chips:
Mix melted Nutella with melted butter in bowl and stir until well blended. Add in pinches of salt and stir again. Place a sheet of parchment paper on a cookie sheet, pour Nutella mixture onto the parchment paper and spread thin (about 1/8 inch) with spatula. Place in freezer for 2-3 hrs until solid. Remove and cut into small cubes / chunks and return to freezer while you make ice cream base. Makes approx. 1 cup of chips.
To make Ice Cream:
Place large glass or metal bowl (plastic won’t work here) and electric beater mixers into freezer for 10-15 minutes prior to mixing. When bowl and beaters are chilled, pour whipped cream into bowl and beat until soft peaks form. Slowly fold in sweetened condensed milk. Add mandarin juice and zest and fold again. Using electric mixer, beat mixture into soft peaks again. Remove Nutella chips from freezer, and fold into ice cream mixture. Pour ice cream into 5 x 9 metal loaf pan or approximately sized freezer safe, deep container and cover with foil or plastic wrap. Freeze overnight.
To make Sandwiches:
Using your favorite cookies (we used almond shortbread cookies) scoop about 1-2 tablespoons of ice cream onto one cookie and gently top with second cookie. Return to freezer if not serving immediately. Serve with mandarin slices, perfect for little fingers! Makes approx. 12 mini sandwiches and a few extra scoops for the big kiddos (approx. 2 quarts of ice cream).
