We love salsa so much that we wanted to pay homage to it, through the power of grapes!
This nontraditionally featured ingredient may not be the first ingredient in mind for salsa, but trust us, each bite is flavorful and satisfying. Not only can you enjoy this as a dip with chips or pita, but also atop fish or chicken. We believe incorporating fruit while cooking for friends, family, and loved ones is a fantastic way to breathe new life into frequently created meals. Especially with little ones who like a variety of foods and flavors to choose from.
Mediterranean-Style Red Grape Salsa
- ½ cup red grapes, diced
- ½ cup cucumbers, diced
- ½ cup gold cherry tomatoes, diced
- ½ cup red onions, diced
- 6-8 fresh mint leaves, finely diced
- 1 jalapeno, seeded (if desired) and diced
- 2 tsp lemon juice
- 1 tsp salt
- 1 tsp pepper
Combine all produce in mixing bowl and toss. Add lemon juice, salt, pepper, toss again. Serve immediately, or for best flavor refrigerate overnight. Serve with blue corn chips or pita chips, or use as a topping for grilled fish or chicken.
