Herb and Pomegranate Glazed Pork

  • 1lb pork loin
  • 1/8 tsp ground annatto
  • Pinch of saffron
  • ¼ tsp cayenne pepper
  • ¼ tsp turmeric
  • ½ tbsp sesame seeds
  • ½ tbs thyme
  • ½ tbsp. Marjoram
  • ½ tbs of olive oil
  • Salt to taste

Pomegranate glaze:

  • ¼ cup white sugar
  • 16 oz of fresh pomegranate juice

To make glaze: Place juice and sugar in a skillet on medium on the stovetop. Cook until thickened and remove from heat.

To make the pork loin: Mix all herbs and spices together in a large bowl, place pork loin in the bowl and roll to coat entire loin completely with a good thick coat of herbs and spices. Preheat oven to 375F. Place pork loin in skillet on stovetop on medium-high heat and brown the sides of the loin. When oven is heated place loin still in skillet in the oven. Cook for 10 mins, turn over, and cook for approx. another 10 minutes or until pork reaches an internal temperature of 145F (for medium rare) or 160F (for medium). Remove loin from oven when cooked to desire temperature and place on carving tray to cool slightly. Slice loin in several slices about ¼ thick, place on plate and drizzle over with pomegranate glaze. Serve with your favorite fresh veggies like a broccoli and pomegranate aril salad!
