Gluten-Free, Dairy-Free Grape Rosemary Focaccia

The joining of sweet organic red grapes and savory Rosemary is as delicious as it sounds, trust us! Take comfort in this gluten-free and dairy-free treat alongside your pouch of organic red seedless grapes.

Ingredients:

  • 3 1/4 cup of 1:1 gluten-free flour
  • 1 package of quick-rise yeast (7g) + 1/4 cup of warm water
  • 1 Tbsp fine sea salt
  • 1 Tbsp of granulated sugar
  • 1/4 cup of olive oil
  • 2 cups of water
  • 1 sprig of fresh Rosemary

Toppings:

  • 1/2 cup of fresh organic red grapes, halved
  • 1 sprig of fresh Rosemary
  • To taste: olive oil, fresh ground pepper, coarse sea salt, pine nuts

Tools needed: Mixer with a bread hook or large mixing bowl and strong spatula.

Instructions:

Combine yeast and ¼ cup of warm water in small bowl, stir and allow rest for approximately 10 minutes or until foamy. In mixing bowl with a bread hook, combine dry bread ingredients: gluten-free flour, salt, sugar, rosemary. Mix for 30 secs to 1 min. While mixer continues to run, gradually pour in olive oil and yeast mixture. Allow to mix and scrape down sides to make sure that flour and wet ingredients begin to combine thoroughly. Slowly pour in water and continue to mix and scrape until a thick sticky ball of dough forms.

Using hands, form ball into a round shape and cover mixing bowl with a towel. Allow dough to rise in a warm place for at least 2 hours. After two hours, remove dough and press into 9 x 13 inch greased or parchment lined baking pan. Cover and allow to rise for an additional hour or more. Then brush bread with olive oil, sprinkle on coarse salt, fresh ground pepper, and more rosemary. Press down grape halves into the dough throughout. Preheat oven to 450ᵒ F and bake bread at this temperature for 10 minutes. Remove from oven, top with pine nuts, and reduce oven temperature to 400 F. Bake bread for additional 10 minutes or until the top of bread is lightly browned. Remove from oven and allow bread to rest and cool for about 1 hr.

Slice and serve with olive oil and balsamic vinegar.

Makes one 9 x 13 inch batch of bread.
