These little squares pack a mighty energy punch.  They’re easy to make and provide a perfect pre-workout snack.  Try ’em out and let those taste buds do a happy dance.

Makes about 6 small squares.             Preheat oven to 350F.

Ingredients:

1 cup of Brown Rice puffed cereal
¾ cup of Quinoa flakes (uncooked)
2 Tbs of Organic Flaxseed
¾ cup Homegrown Organic freeze-dried blueberries
1 cup mixed Almonds and Walnuts, hand chopped into desired size smaller pieces
½ cup Raw wild Honey
2 Tbs Peanut Butter
1 oz German chocolate baking squares, chopped into chunks

Instructions:

Place Brown Rice cereal, Flaxseed, Quinoa flakes, Almonds, Walnuts, Dried Blueberries, and Chocolate chunks into a mixing bowl, toss together lightly with your hands or a spoon, and set aside.

In separate microwave safe bowl combine Honey and Peanut Butter. Heat Honey and Peanut Butter in microwave on high for 30 seconds. Remove and stir until smooth and blended, about 30 seconds.

Pour the warm mixture over the dry ingredients and stir making sure to coat everything well.

Pour granola mixture into a parchment paper lined 2qt baking dish, and press down the mixture with an additional sheet of parchment paper until it is evenly smoothed, about 1 ½ inches thick.

Place mixture in oven for 20 minutes until the granola is lightly browned on top. Remove, allow to cool and then cut into desired size squares. Place remaining bars in a covered container in the refrigerator until ready to eat.
