This warm, homemade blueberry syrup is a waffle’s perfect pair. If you have not yet experienced the wonders of homemade syrup, be prepared for your taste buds to do a happy dance.

Ingredients:

Waffles:

  • 3 cups all-purpose flour
  • 3 eggs, separated
  • 1 pkg of yeast + ¾ cup of warm water for dissolving
  • ¾ cup of water for batter
  • 1 ½ cup of milk
  • ¼ cup vegetable oil
  • ½ cup sugar
  • ½ cup fresh blueberries
  • 1 tsp almond flavoring

Blueberry Syrup:

  • 1 cup of fresh blueberries
  • 1 Tbs of lemon juice
  • 1 Tbs cornstarch
  • ½ tsp cinnamon
  • 1/3 cup sugar
  • ½ cup water
  • ½ cup maple syrup

Instructions:

To make the sauce. Heat sugar, cornstarch and cinnamon on stove top in pan on low-medium heat. Slowly add water and stir continuously until mixture starts to thicken. Add blueberries and lemon juice and simmer stirring regularly until blueberries cook down, approx. 10 minutes. Remove from heat and add in maple syrup. Puree mixture in blender if desired. Pour into serving container. Makes approx. 1.5 cups.

Dissolve yeast in warm water and wait 10 mins. If desired beat separated egg whites into soft peaks. (A chilled glass or metal bowl and chilled beaters is best for this). In separate large bowl mix milk, sugar, oil, flour, and egg yolks. Fold egg whites into batter mixture with spatula. When ready, add in yeast and mix. Add in almond flavoring and blueberries. Fold until lumps disappear. Heat waffle iron and add batter, cook according to your waffle iron’s directions. Top waffles with fresh blueberries and blueberry syrup! Makes 4-6 waffles.
