Blood Orange Chocolate Covered Marshmallows

Beautiful, deep red blood oranges and chocolate are one of our favorite flavor combinations which inspired us to create this unique marshmallow. Get your zester and your organic blood oranges, you’re going to need them! We hope you enjoy our chocolate covered blood orange marshmallows as much as we do!

Ingredients:

Marshmallows:

  • 2 1/2 Tbsp. Gelatin
  • 1 1/2 cup of powdered sugar + more for dusting
  • 2 cups water
  • 1 tsp. orange oil
  • Juice of one whole organic blood orange
  • Zest of one organic blood orange
  • Pinch of salt
  • Orange food coloring (optional)

Chocolate Coating:

  • 1/2 cup of chocolate chips
  • 1 Tbsp. shortening
  • 2 tsp. orange oil
  • 1 tsp. blood orange zest

Instructions:

Add ½ cup of blood orange juice to gelatin, mix and allow to set. Add sugar to a medium sized pot, add sugar, ½ cup water, and salt and cook on medium-high heat until mixture reaches 240F or the soft ball candy stage. Slowly pour sugar mixture into gelatin and blend on high with beaters until fluffy (this may take a while so be patient). Stir in orange zest, blood orange juice, orange oil, and food coloring. Pour fluffy mixture into a parchment lined and confectioner sugar coated 9 x 9 pan and refrigerate for at least 4 hrs. When ready, slice marshmallows into the desired square size and prepare chocolate for dipping.

Line cookie sheet with parchment paper. Pour chocolate chips, shortening, and orange oil into a microwave safe bowl and heat on high for 1-2 minutes until chocolate is melted. Stir in orange zest. Quickly dip marshmallows into the melted chocolate, coating as much as desired, and place on parchment paper. Once all have been dipped, place the marshmallows back in the refrigerator for at least 1 hr for the chocolate to harden.
